On the website I linked to, you'll see a "Usage" section on the page for
each individual font.  Take the lines of code listed there and add them
to the preamble of your TeX document (the stuff before
"\begin{document}").  Traditionally "\usepackage" commands are the first
thing to appear after the "\documentclass" declaration, but they can
technically go anywhere in the preamble.  This will effect a global
change to the fonts in your document.

For example, for Garamond the code is:

\usepackage[urw-garamond]{mathdesign}
\usepackage[T1]{fontenc}
