You will need to redefine the \Abar, \Rbar, and \Vbar macros:
\newfontfamily\versiculum{Versiculum}
\def\Abar{{\versiculum a}}
\def\Rbar{{\versiculum r}}
\def\Vbar{{\versiculum v}}
Alternately, you can create new macros and use them within <v></v> in
gabc.
Mr. Van Roode has seen fit to include the dot as part the glyph, so
there will be no easy way to remove it if you don't want it.
