Yes. Document margins set in the TeX code are respected by GregorioTeX
when a score is typeset.

Most likely. Initials can be formatted to use any font which is
available to your TeX installation. If you know which font is used in
that example and have it installed to that TeX can find it, then you can
use it.
Can I use jewelry pictures between the pieces ?
Not sure what you mean by "jewelry pictures" (probably a translation
issue), but anything that can be put into a normal TeX document can be
placed between scores. This includes text, graphics, tables, and just
about anything else you may desire.
