The way to quote in gabc must take into account that the text (the part that is not between parentheses, so not the notes) is redirected to LaTeX, where the quoting happens in another way. So for opening double quotes, you have to write two grave accents (``) and for closing these, two apostrophes (''). Be aware: two apostrophes ('') and not a double quote sign (")!
