First: When asking a new question, please start a new message rather
than replying to an old one and modifying the subject line.  Replying to
an old message leaves header information intact so that email programs
which sort messages by thread will group your new message in with the
previous topic rather than starting a new one.

As for your actual question:
is there a way to ask Gregorio to truncate the staff following the
conclusion of the user-inputted content?

There is no automatic way of doing this.  GregorioTeX draws the staff
lines at the beginning of each line before it knows how far across the
page the notes will go.  As a result, the lines will always go the full
width of the page.

One thing you can do is encapsulate the include score in a minipage
environment.  This environment temporarily simulates a smaller page
width (which you have to specify manually), thus causing GregorioTeX to
draw shorter lines.
