This isn't a TeXShop question either, it's a LaTeX question.

Basically you need to create a table, which can be done with either a tabbing, array, or tabular(*) environment.

1) tabbing: this one works the most like the tab-stop functionality of a WYSIWYG word processor. In the first line (or an optional kill line) you define tab stops to which you can align things in the subsequent lines.

2) array: this is only available in math mode, and thus not likely to be useful to you for text

3) tabular(*): these create you basic tables with the difference being that tabular* has a fixed width (which you provide when you setup the table) and tabular does not.

There are also packages out there which expand the sorts of tables that you can create, providing such capabilities as proportional columns.
