There is no specific command for changing the color of the initial, but
it can be accomplished by putting a color change into your definition of
the initial style. For example, to use the same color that gregorio
uses for <c></c> elements in the gabc:
\grechangestyle{initial}{\fontsize{43}{43}\color{gregoriocolor}\selectfont}

to pick your color.
