Piece of cake. The text is simply inserted according to the normal
rules for TeX documents.
While I don't think it compiles anymore (it was made with an older
version of Gregorio) the fourth example on our examples page shows a
fairly long example which mixes a variety of elements. The sources
should at least give you an idea of how to get started.
