I haven't had a chance to test this yet because I'm scrambling to get
ready for Vespers, but I think the problem is a missing file.
If you're willing to test:
1) Download gregoriotex-symbols.lua from here:
https://github.com/gregorio-project/gregorio/tree/master/tex
2) Using system-setup.bat identify where gregoriotex-symbols.tex is and
copy the file you downloaded to that location.
3) Run `initexmf -u` (MiKTeX) or `mktexlsr` (TeXLive) at the command line.
4) Try to compile your document again.
If this works, then I'll have a beta3 with the fix in place posted later
tonight.
