There are two crosses readily available in GregorioTeX already.  The code to 
produce them is `\grecross` and `\grealtcross`.  You can include these commands 
in the gabc directly via `<v></v>` tags, or define a special character 
substitution.  For example, if you include the following in your TeX file: 
`\gresetspecial{+}{\grecross}` then any occurance of `<sp>+</sp>` in the gabc 
will produce the said cross.  If you prefer the look of the maltese cross that 
Albert pointed to, then you can define your special as 
`\gresetspecial{+}{\maltese}` (assuming that you've loaded the amsfonts 
package).
