You messages are not MIME encoded, no matter what your mailer says. The
issue is (as you mentioned), the HTML message content. If you added
HTML,we would see the MIME header as well as the HTML content.

You are correct in that it is the HTML-ised message content that is
forcing the MIME header to appear.
