Yes you can put back the stock. The drilling is because of the screw on the
stock GTS that are tamper proof.

You don't need to change the throttle cable.

You only need the handlebars 4 inches rise 6 inches pullback (or is it the
other way around) for about 15 to 40 $.

That's what you should get plus the 2 screws at the bottom that hold the
ignition to the ignition switch.
