gnu: Remove emacs-let-alist.
The version built into Emacs 31.1 is more recent despite having the same
version number.
* gnu/packages/emacs-xyz.scm (emacs-let-alist): Delete variable.
(emacs-ghub, emacs-paradox, emacs-pdf-tools, emacs-flycheck-rust)
(emacs-window-purpose, emacs-skeletor, emacs-psc-ide, emacs-biblio)
(emacs-kodi-remote, emacs-flycheck-elm)
(emacs-flycheck-haskell)[propagated-inputs]: Adjust accordingly.
