Yes, you can modify xorg.scm, and then reconfigure your GuixSD from the modified sources. But IMO the xserver.conf in xorg.scm is not in a good shape for customization.
Also you can install the fonts into user's profile, then do: xset +fp ~/.guix-profile/share/fonts/X11
