Good idea!
I also like 'good first issue', to be more explicit in that the intent
is to invite new people to try to tackle it. (So other people leave it be.)
'low hanging fruit' can also be interpreted as "let's get this out of
the way first because it has big impact for little effort", which is
something else.
For example, refreshing outdated packages or fixing broken packages can
be good first issues exactly because they are pretty low stakes.
Come to think of it the 'help-wanted' label can mean two totally
opposite things w.r.t. your idea: "Help, this is to complex for me, I
need an expert here!" (unsuitable), or "Help, this is too much work for
me alone, but anyone should be able to do it, so let's do this
together!" (suitable).
