‘guix system vm’ is Linux-only: it uses a QEMU feature that allows is to
boot straight into the kernel, and it mounts the host’s store over 9p
such that the image that it builds is very small (because all the rest
is in that shared store).
To debug Mach, you need to create an image. You can cross-compile one
from Linux with something like this:
guix system image -t hurd64-qcow2 \
gnu/system/examples/bare-hurd64.tmpl
Then you can boot that image with QEMU.
Since it’s a full-blown image, including the bootloader and a full
store, it can be relatively large.
