Pear and Apple Pie
 
3 cups pears, pared and thinly sliced
3 cups apples, pared and thinly sliced
3/4 cup sugar
3 Tbsp. flour
1/2 tsp. cinnamon
1/4 tsp. salt
1 (9") unbaked pie shell
 
Topping:
1/3 cup margarine
1/2 cup brown ssugar
1 cup flour
 
Combine pears, apples, sugar, flour, cinnamon and salt.
 
Topping; Cream margarine and brown sugar. Mix if flour. Sprinkle over top of pie.
 
Fold a 14" circle  of foil loosely over top and around sides of pie. Bake at 400* for 40-45 min. Remove foil and continue baking for 20 min. longer.

MANGO CAKE

1/2 c. shortening
1 c. sugar
2 eggs, beaten
2 c. flour
3 tsp. baking powder
1/2 tsp. salt
1 c. finely chopped mangos
1 TBS lime or lemon juice
1/2 c. chopped nuts

Preheat oven to 375 degrees F.

Grease a 9-inch square cake pan.

In large bowl of electric mixer,
cream shortening and sugar.

Beat in eggs until mixture is fluffy.

Sift flour with baking powder and salt,
stir into cream mixture.

Fold in mangos, lemon juice and nuts.

Pour into prepared pan and bake for 35
to 40 minutes.

Makes 9 servings.
