Chris, Getting Sextante to work with gvSIG is a hit and miss game at the moment.
Both developers seem not to be talking or collaborating at the moment and the result is confusion (this is my observation/opinion - please don't chastise me regarding this comment). As fast as a workaround appears the goal posts are shifted. Antonio is the only person that appears to be up to speed with this moving target. Check out his latest post. I have not tested this yet as I just moved to Ubuntu and just getting gvSIG to work with the latest version of Java was a nightmare.
