Assuming you haven't created different user profiles and switched to those profiles, the default location for your entire Window-Eyes session is stored at:

%appdata%\gw micro\window-eyes\users\default

Notice I used the percent signs around the appdata as that is an environment variable.

Notice under WE 7.0 you can go to the WE file menu and select the Set Active Profile option. This brings up the Set Active Profile dialog. From there you can press alt-o (the shortcut for the Open Profile Path button to view your active directory in Windows Explorer. From there just do a ctrl-a to select everything and ctrl-c to copy it and then move in explorer to where you want it and press ctrl-v to paste it out. It really is simple to make a backup.
