Tap the alt key, then hit p for page, then right arrow to tables. That will get you started at least. National Braille Press has a small booklet that has all the Vista shortcuts but I do not know if it includes Office. It is called Windows Vista Keyboard Commands and it is $5.00. It comes as a ASCII text file on a CD, as a down load, in braille, or their Portabook.
The Office help has a keyboard shortcut list too I believe.
