Dave,
If your USB device is recognized as a headset and if you have the "use
headset when available" checkbox checked in the options window, then
yes; GWConnect will use it when you connect it to the computer. However,
if the audio device list changes and the device you've set isn't
available, GWConnect will fall back to using the first working set of
inputs and outputs that it can find.
