Glad you asked the question, because it make me go figure it out.  I'm in 
Office 2010 in Windows 7.  I just tried a couple things in Office and hope 
these help.

First, go to an office program and Hit control O to get to the dialog box.  
Shift Tab until you hear Organize button and click on it.  Under Layout, 
uncheck anything you don't want.  The only item I have checked is the 
Navigation pane, but that's just my current preference.

Second, and more important for what you want, start back at the dialog box.  
Again shift tab until you get to the Organize button,  then hit right arrow 
until you hear View split button.  Hit alt down arrow to open it and you'll 
hear that it's a slider bar.  Makes no sense to me why it was designed this way 
and I cannot seem to get Window Eyes to read what the calibrations mean, 
however, using my bit of vision, I found that there are options going up and 
down alongside that slider that say things like smaller icons and larger icons, 
list, and so forth as we used to see on the View menu.  Having now clicked on 
the ListView option with my bit of vision (or maybe I could have used a Window 
Eyes Control shift f to find that button), I now hear Window Eyes say that the 
track position is 99.  So, I think that if you were to just arrow up or down 
until you get to 99 and then hit return, you will be in the listview.  I did 
this and now that Names split button you don't like is gone from all
 my Office 2010 open dialog boxes.

Subject: altering the windows 7 file open dialog

Despite having set views to list view in windows explorer and selecting the 
apply to all folders button, whenever I go into an application and invoke the 
file open dialog with control o and then shift tabbing beyond that split 
button, I hear things like file name date modified size type index. Is there 
anyway to get it back to where it just says file name and then index, like in 
windows explorer? Windows seven, wineyes 8.4.
