Peter, I am using both Outlook 2010 and I E 11 with the beta without the crashes you are experiencing. I run Windows 7 64 bit on a dell PC. I do a lot of navigating by heading in I E and I send e-mails every day, and I have not had Window-Eyes crash yet. I know that doesn't help you, but maybe you need to look at your settings.
