The ASCII export just exports the data, i.e. the heightfield z values.
Usual AFM data form a regular grid so the coordinates are not explicitly
stored as it would be rather wasteful.  Dimensions of the gird, both
pixel and physical, can be optionally written to the informative text
header.

All data values should be exported, if not, please post how to reproduce
the problem.

You should get all data.  Since XYZ data are more general than regular
heightfields most programs that work with XYZ data can also take regular
heightfields.  Are you sure you need the data represented as XYZ?
