It's a bit hard to say for sure. If you look at the peasants by Hans Sebald
Beham of the similar timeframe, most almost certainly have seams going up
under the arm, then in some other woodcuts of a similar subject also by
Beham show a much earlier cut in the shoulders and seams down the back of
the arm.

Odd shoulder piecing, but seams likely under the arm or only slightly
rotated to the back (which seems to work well for German garb as well rather
than stright under the arm or right up the back of the arm.

The paint possibly shows an indication of a back seam on both figures, but
that's up to interpretation.
