I can't speak to the question of retaining the Universal Jewish Encyclopedia, having never used it, but I would very much encourage you to retain the Jewish Encyclopedia in addition to the Encyclopedia Judaica. The Jewish Encyclpedia still has many fine articles in it, especially those on rabbinical topics by Wilhelm Bacher. Though I can't give examples, I have sometimes found individuals listed in the JE who were not to be found in the EJ.
