I'm a fan of Jenny Diski's Only Human and After All the Things, retellings of the Abraham and Sarah and then Isaac and Rebecca.

I heard a reading on NPR this weekend from Ladies and Gentlemen, The Bible by Jonathan Goldstein. The piece I heard was about Adam and Eve and the serpent and I thought it pretty interesting.

I guess you could call these, like Diamant's Red Tent, modern Midrash. There is actually a collection entitled Modern Midrash: The Retelling of Traditional Jewish Narratives by Twentieth-Century Hebrew Writers. It's a study of the phenomenon though, not a collection of stories.
