"red colored"? ... but my library doesn't shelve books by color. ;)
However, my personal graphic books collection is only 2 shelves long (soon to
be 3 shelves), so it's somewhat easy to pick out the red-color covers. Alas, I
can't find anything that matches your description exactly. Also, since  you
didn't say how old your rabbi is, I don't know which time period to search. The
term "graphic novel" wasn't coined until the late '70s.
My first guess was Morris Epstein's A Picture Parade of Jewish History (which
does sport a red cover). This was a compilation of single-page comic stories
which appeared at the back of the educational magazine World Over. However,
these are historical / biographical sketches, not Talmudic or Midrashic.
Olomeinu / Our World similarly published single-page comics on its back pages.
In addition to history & biography, folk tales were also source material for
this feature, but I don't recall any Talmud or Midrash stories being used.
Mahrwood published two reprint collections of these stories in 2008 : The Very
Best of Olomeinu Back Pages: Short stories and The Very Best of Olomeinu Back
Pages : The biographies.
The original Mendy and the Golem comic book series ran from 1981-1984. In
addition to the main story, there were backup features such as "Stories of Our
Sages"and "Torah Tales". I'm certain some of their backups were adaptations of
stories from the Talmud and Midrash.
Midrash Manga was published in 2006 by Behrman House.
Yonah Lavery published Talmud Comics online, which used to be hosted at
http://talmudcomics.net/, but the site is inactive and I don't think they were
ever published in print.
The library I worked for used to own volumes of The Midrash Says and The Little
Midrash Says, but I don't believe that either series had comic pages.

That's all I can come up with right now.

Steven M. Bergson, EditorJewish Comix Anthology, vol. 1(which contains a
reprint of an "adult" Talmud story about Rabbi Ben Dordia)

I am looking for a book that the rabbi of my shul remembers very fondly -  a
red colored book from his youth that featured stories from the Talmud and
Midrash in graphic novel style. Does this sound familiar to anyone?
