I have used lat/lon for satellite images where the data is not on a regular grid. I was trying to save file size by not dumping out all the lat/lon float values.
I'll look at the examples.

HDF-EOS can assure the geographic projection is specified without providing lat/lon values.

If you prefer to use HDF5 or netCDF-4, you definitely need to provide latitude and longitude values, An attribute called units="degrees_east" for longitude and units="degrees_north" for latitude should be specified to assure the CF compliant.

You may find HDF5, netCDF4 and HDF-EOS5 examples that may be similar to what you want to achieve.
