Thanks for the offer, but I'd already gotten most of it done by the
time you replied. I've just opened a pull request that contains both
an elasticsearch.lua module for general use, and an es_payload.lua
SandboxEncoder implementation that uses the module to replicate
v0.5.2's `format = "payload"` behavior:

Once that goes through code review and gets merged the docs will be
updated, but for now you can see how to use the new encoder here:

Should be pretty straightforward to work out how to convert from older
payload format to the new spelling, but please let me know if you hit
any hiccups.
