Hi,

Are you suggesting that I do both of these, or are you questioning
whether I'm doing both?

Yes, you need to set both to resolution.
Sorry I wasn't questioning you.

Your /etc/default/grub
GRUB_GFXMODE=800x600
GRUB_GFXPAYLOAD_LINUX=800x600

And at your grub.cfg....
     set gfxpayload=640x480

Why is this then at 640x480 when you have set to 800x600?
I think you need to "update-grub" or "grub-mkconfig -o..."

And yes, if you do not use theme, you should ignore my previous thread.
(but adding them does no harm, just to add).
