Blackberries in Creamy Honey Sauce

Jacques Pépin notes that any other 
berries - strawberries, boysenberries, 
raspberries - can be substituted here. 

Be sure to choose very ripe berries 
for maximum sweetness.

Yield: Makes 4 Servings

Ingredients:

2 cups (1 pint) blackberries
1 tablespoon sugar
3 tablespoons honey
1/4 cup orange juice
1 cup nonfat plain yogurt
1 tablespoon shredded peppermint leaves


Gently toss the blackberries and sugar 
in a small bowl. 

Cover, and refrigerate until serving time. 

Meanwhile, mix the honey and orange juice 
in another small bowl. 

When the mixture is smooth, add the yogurt 
and mint, and mix just until smooth. 

Cover, and refrigerate until serving time. 

To serve, divide the yogurt sauce among 
four dessert plates. 

Mound some berries in the center, dividing 
them equally among the plates. 

Serve immediately.
