CHICKEN TACOS
SAUCE
1/3 cup mayonnaise
1 tsp ground cumin
2 tbs medium heat chipotle salsa or regular salsa
2 cups shredded cooked chicken
1/2 cup medium heat chipotle salsa or regular salsa
12 taco shells
1/2 head lettuce, shredded
1 cup shredded Cheddar or Monterey Jack cheese
SAUCE---Mix mayo, cumin, and 2 tbs salsa in a bowl. Combine chicken and 1/2 cup
salsa in a microwave bowl. Microwave on high until hot, about 1 1/2 min. Fill
taco shells with chicken mixture, lettuce, cheese, cilantro, drizzle with sauce.
This recipe makes 4 servings of Chicken Tacos.*
