Sounds reasonably plausible to me - the structure is highly adaptable. I
actually really like the idea of gutters & collecting rainwater - yet
another way to improve your sustainable living. Others will undoubtedly have
a more expert opinion, but if I were doing it (novice that I am), I'd just
attach a gutter system to the roof/wall seams - I don't see needing an eave
- keep the joint flush as usual & just butt the gutter right alongside it.
One or two drain pipes & a couple of rain barrels - viola!

Could the HY be fitted with eaves, either as extensions to the roof
panels, stick-on gutters, or even a textile flysheet ?

At present this building is not able to divert rainwater from it's
immediate foundations nor is it able to collect water for it's
occupants or their animals to use.
