With MDF I suppose if you immersed the wheel in water it would swell (but if you keep your instrument in a bucket of water, that's likely to be the least of your problems). For normal use, however, humidity does not affect MDF. It is, in fact, made from wood particles in a resin binder. They use MDF in bathroom furniture *because* it is basically impervious to humidity. The maker I know who uses it now does not even put banding on his wheels.
