Just my opinion: Unless you are planning to run lots of servers (putting a lot of load on the bus) the disk probably won't impact performance too much. The main thing faster disk will help is in tying up the OS during disk activity, which could cause lag spikes for the servers. The best way to avoid this would be to run fast disks and use SAS not SATA. The read speed advantage itself is not really a big value, if you load a map file 1 second faster it's not really a big time savings. Instead it is all about keeping the server from hiccuping, that's where the SAS can help, but really it probably is not needed.
