We have a dual xeon 2.4ghz and two dual opteron (240 and 246), gentoo all the way. (Btw, on opteron 246 and over you can use pc3200 ddr400 chips).
For the dual xeon, debian was in the first place, and i'd say gentoo is far better (mean faster) than debian.
There should be a benchmark of the librairies' calls made by hlds/srcds. It should help to select the best linux distro.

I can't speak for Opteron, but I know that an Athlon64 runs circles around my dual xeon 3.06Ghz desktop machine.
