I run 5 source servers with plenty to spare on a dual 2.8, how big are your servers?

SMP is your best bet to reduce any server lag during map changes.
I've managed to run three source servers on one dual 3.4 Xeon box connected to an OC3, but it's not likely you'll be able to get away with running 5, unless all the machines are less than 12-14 players each.
