I am using Opteron64 DualCore for socket 939, with Debian64 kernel 2.6.19 @ 1000hz, also using the hlds_amd64, a full 10slots server with pingboost 2 enabled consumes about 1-4% CPU with a peak of 8% (mapchange etc). The server is running at 1000fps, but drops down to 500fps some times.
When using the hlds_amd binary the CPU consumes about 30% more.
