to answer my own question, I've added:

extra_word_characters: '
#to allow apostrophe

valid_punctuation: .-_/!#$%^&
#to stop apostrophe being stripped

and it seems to work as long as there's only one apostrophed word in 
the added keywords, as soon as there are 2 (chainmaker's is a sub 
category) then it stops returning results again.

I guess I'll have to return to the default behaviours and strip the 
apostrophes from my added keywords...

unless someone has a better notion?
