agree this is a usability issue and we should warn/prevent the user from messing up their own work. As a quick fix I would put a check when switching drag mode to mosaic. If the pano is >180, issue a warning (but still activate mosaic drag mode). No graying out for now. Longer term it may be worth to determine if the project is (a) a mosaic (b) a panorama (c) undetermined but this is not as easy as it sounds. Every project starts undetermined.
