The Photometrics option aims to show you the preview like it will be
in the final output. So when it's on the colors and everything
resemble what you see in the test stitch.
>From what you tell, I presume that the Exposure setting is off. One
thing that might help is to reset the Exposure. For this you can go
into the "Camera and Lens" tab and press the Reset button. Reset the
Exposure to the EXIF Values (and maybe also reset Color, Vignetting
and Camera Response), but leave Orienation, Field of View and Lens
parameters alone (I hope it's still these values on the Mac, I only
have an old Windows version of hugin on this computer). See if that
helps with your color problem and get back to us if it doesn't.

I suspect that you've been using the Assistant, which maybe failed to
correctly optimize the exposures of your stacks. This can only be told
if we can see your shots. But first let's see if a reset of the
Exposure helps...
