I'm in the process of stitching a 5 image 180x360 panorama, however I'm
getting some color clipping on the remapped images, while the source images
are ok. I posted an example of this behaviour here: http://imgur.com/pSvQLuA
.
I've tried to set all the ev settings to zero, and tried to disable it, but
nothing keeps the images from turning out this way.

I've set the EV in the GL preview to 0
I've set the EV in the Camera and Lens/Photometric tab to 0
On the Exposure tab, I unchecked all the checkboxes under Exposure (Eev).

What setting can I change to be able to get usable images out of the
remapper?
