The process is quite simple once you’ve extracted the frames from the movie. Here’s a little tutorial I wrote 7 (!) years ago: http://habi.gna.ch/2009/04/10/panoramas-from-low-quality-movies/ Obviously getting a movie off an iPhone is much easier now, but the other points in that post are still valid. Depending on the format of your movie, you can use ImageJ (http://fiji.sc/Fiji) or VLC to extract the frames, and stitch those with hugin afterwards. Hope that helps.
