Marcus,
The install doesn't seem to be placing any new files in the root directory of the Fat32 partition on my SD card...

At the end of extraction you should see messages like this:
(this is an edited copy of the serial debug but you get the idea)

=============================================
        * EXTRACTION DONE *

CORRECTING FSTAB FOR ROOT NODE.

CREATING LABRUN FILE ( JUST FOR FUN :)
    * LABRUN CREATION DONE *

COPYING KERNEL OUT OF FILESYSTEM.
    * COPY DONE *

UNMOUNTING EXT2 PARTITION.
    * DONE *

COPYING KERNEL TO FAT PARTITION.
    USING KERNEL EXTRACTED FROM /BOOT.
    * DONE *
    COPYING NEW KERNEL TO SECURE DIGITAL
    * DONE *
    CREATED NEW STARTUP.TXT
    UNMOUNTING SOURCE
    * DONE *

INSTALLATION SUCCESSFULL !!!

PLAYING AUDIO AT VOLUME 90/100

=============================================

I'd like to know what your screen looks like at that point,
in particular the section from "COPYING KERNEL.." to
"INSTALLATION SUCCESSFULL".
(note that the latest version says something like
"COPYING KERNEL AND FILES")

> The startup.txt file
is the same after installing as before. (The reason that I mentioned editing the startup.txt file is that I was retaining previous kernels for testing)
        Thoughts?

Can you confirm that you have the _latest_ version?
This should not be happening.
http://www.users.on.net/~marcusbrutus/ramdisk-rescue/
contains all the files, please check dates, sizes, etc.
