Velocity is the correct term. The word velocity refers to speed - in this case 
the speed of the drumstick when it hits the drum. Harder hit = more speed = 
higher velocity = louder.
The same word is used in connection with midi, to refer to the 'hardness' of 
keys pressed on a keyboard.
