I'l assume you're doing your latex typing on the Ubuntu OS. (You can install
it on windows of course using
http://10.10.4.1/pub/Linux/software/opensource4windows/texlive2007-inst-20070212.iso).

Is your matlab installed installed in a Virtualbox Windows or a windows on a
separate physical partition. If thats the case you could put the snapshots
to your shared folder or actually take pictures using Ksnapshot to your host
system.

Incase, its on a separate partition, you could store your matlab graphs as
jpg you on the windows partition and alter use them in latex in Ubuntu. (if
you want eps for some reason you can convert them to eps using convert
program or Kolorpaint).

There's always the option of using Matlab for Linux on the Ubuntu as well.
