As you know, You can leave the mails in server when using thunderbird.

Shifting is easy. Thunderbird has a plugin to import all gmail contacts.
For added security, we can use PGP to digitally sign or encrypt the mail
before sending with easily available plugins.

Yes, It's easy. We don't even have to use export option, simply copying
'~/.thunderbird/' works :)

You should try mutt. It's pretty fast and can be integrated with
vim/emacs for composing mails. And there are many powerful features in
mutt, I've not tried those much to say here what they are. Heard there
are many powerful filtering options.
