I think those comes under a package called gnome-panel. The reason for their unexpected disappear may not be the error with their source code since it's not happening to everybody. Please check your startup items, it may help.

Yes, it's possible if you modify the source code of applets. But is it necessary? By default, the applets are configured to show useful information as tooltips. Also some applets are coded inside gnome-panel itself. And if want to modify them like that, we should know the path of executable/source already :)
