Ok. Then try this - keep a "top" running in a console, and when the server becomes real slow, note down the following:
1. load average: All the three values
2. Memory: The av, used and free values
3. Swap: The av, used and free values


Also I hope that you are not running X on the same poor server.

One more thing, when all your company people are using imap and especially the standard /var/spool/user mbox files, encourage them to keep their inboxes small. I have seen people having inboxes 50-100MB big, and the computers go crazy trying to read through these huge mbox files for all the users who have imap open. Also mail deliveries to such huge files slow the system down.

Do one thing, run the command "ls -lSr /var/spool/mail" and give us the sizes of the top five largest mboxes in the system.
